I wasn't able to get the turkey in time to soak it in a brine.
I put apple, cinnamon stick, onion in hot vegetable broth to steep. I put the bird on a roasting rack, then stuffed with the apple and onion, as well as fresh sage, rosemary, time. I put a few slabs of butter underneath the skin and covered the bird with olive oil. The recipe I was looking at said not to cover with tin foil but this seemed weird to me.
It's been in the oven about 10 minutes, but I'm getting nervous it's not going to come out very good.
Let me know if I should change what I'm doing…! Thanks!

Just as many of you, I have alot of cooking to do on Thanksgiving, and I just do not have the time to bake a pie the same day as my turkey and my ham.
I plan on starting on some of the sides tomorrow, many of which will require oven time, so I was wondering if it would be alright for me to make my apple pie today, and leave it on the counter until Thanksgiving. I am just worried that my pie will become dry or possibly go bad while waiting on the counter until Thursday.
We will be eating dinner at 1 PM on Thanksgiving, if that makes any difference. It will not be sitting all day on Thanksgiving.in response to Country Joe:

My oven has room for one at a time. Can i cook the ham before the turkey. The ham is 10lbs and will take 25min a pound. My turkey will take about 3 1/2 hrs. It seems to me that this site (along with many other websites, I'm sure) is causing some people to not only not have an opinion, but not even attempt to find one. Browsing different questions, I see tons of "What should my favorite song be?" "Where should I apply for a job?" "What should I name my firstborn child?" Come next election time, I wouldn't be surprised to see people asking whom they should vote for.

OK I know its Thanksgiving is coming up in 1 day and I am not looking to overcomplicate things here. I need a very simple plain kosher salt & ice cold water recipe to brine this 12lb bad boy but really not interested in adding other flavorings or spices.
Not sure how many cups of kosher & ice water I need to brine this simple bird for it to come out moist and tender.
Also, how many hours does this defrosted turkey need to brine for??? 8 hours, 10 hours, 12hours???
And last but not least how long do I cook this 10lb brine turkey for? And what degree should turkey meat be safe to be cooked at?
This is my frist time brining and I was chosen to cook this bird I pray I don't do anything wrong (making a veggie lasagne just in case LOL)

I have a 14 lb turkey and I am going to cook it according to what it says on the bird, but inside I am going to put an orange (cut in half, skin still on), and apple (cut in half), an onion (cut in half), and I small clove of garlic, whole. Under the skin of the turkey I am going to put a few squares of butter in various places along with fresh thyme, rosemary and sage… I am going to cook the bird breast side down and pour 1 small can of chicken broth in the roaster, and cover loosely with foil. I also purchased a baster and an injector…. does this sound ok, or do you think the flavors will collide????
